Taco Zucchini Bites

2 large zucchini
1/2 pound (leftover) taco meat
1/3 cup shredded cheddar
opt parsley leaves
opt sliced black olives
Slice zucchini and place on buttered baking sheet.
Top with a spoon or so of taco meat.
Sprinkle on cheddar.
Top with parsley, olives, etc if you like.
Bake at 350 for 20 to 25 minutes.

  6. Ah- thanks for the note about it being gluten-free. I'm trying to start a label for that- just because I know there's lots who need that these days.
