4 cups sliced mushrooms (about 24oz container, whole)
4 T butter
1 egg
1 cup sour cream
1/8 t pepper
1/2 t salt
3/4 cup Monterey Jack Cheese
1/2 cup bread crumbs
1 1/2 t dried parsley
Saute sliced mushrooms in butter. Meanwhile, mix sour cream, egg, salt, and pepper.
Once mushrooms are brown, drain and mix with sour cream mixture. Spread in greased
shallow baking dish. Top with cheese, then bread crumbs, and parsley. Bake at 425 for
12 to 15 minutes until set and top is golden.
Tip: try this with different veggies or by adding others to this one. Use less mushrooms and add onions.

YUM!!! My dh and I both LOVE mushrooms! My children well they don't like them at all but I will still have to make this maybe just do 1/2? Do you children like mushrooms?
ReplyDeleteWell, they eat them :-) but one of them doesn't like them....the rest tell him .."they don't have a taste, because they take on the taste of the food they're cooked in." lol
ReplyDeleteThis dish is so filling, it could be a main for you and your husband, with maybe a salad. :-)
Believe it or not, mushrooms are the only thing my children won't eat...except for one child.
ReplyDeleteBut who cares, this looks delicious and then there will be more for myself, daughter and dh.
Well, mushrooms are odd- but I'm with you- more for me! ;-)
