Potato Candy
HOW DO YOU MAKE POTATO CANDY?- EASY!- peel and boil one potato, until soft. Drain off the water and mash the potato. The only tricky part is adding the powdered sugar because there's no exact measurement for how much you will need, potatoes are different sizes! (Tip: have a little extra handy.) For a medium potato, I used a little over one bag of powdered sugar. Blend the potato and sugar well, adding sugar gradually. Stop adding sugar just when you have it at a 'dough' stage. Sprinkle wax paper with powdered sugar and roll out the 'dough'. Spread with peanut butter and roll up like a jelly roll. Wrap in waxed paper and refrigerate until firm. Slice and serve. (Jif Creamy peanut butter is my favorite for this, but I have used all kinds including a natural peanut butter, crunchy, and dark chocolate peanut butter.)
