Ultimate Cherry Cookie Bar

The name says it all! 
This isn't the most frugal of cookie bars, but if you're looking for a fancy dessert to serve that really looks nice and will wow your guests (or your husband really loves cherries!;), - this is it!
1/3 cup butter
1 cup white sugar
2 eggs (separate one)
1/2 t vanilla
1/2 t almond extract
1 cup wheat flour
1 cup plain white flour
2t baking powder
pinch of salt
3/4 cup brown sugar
1 cup frozen cherries
opt. 1/2 cup maraschino cherries, drained
1/2 cup chopped pecans

Cream butter and white sugar. Add 1 egg and the yolk of the other egg. Add vanilla and almond extract. Blend in salt, baking powder, and both flours. Pat out dough in sprayed or greased13x9.

Beat the one egg white until stiff peaks. Fold in brown sugar. Gently fold in frozen cherries so as not to crush them and turn the mixture pink. Spread gently over the cookie bar. Place the cherries in a uniformed order if you like. Add additional chopped maraschino cherries. Top with chopped pecans.

Bake 27 to 30 minutes until golden. Cool completely before cutting.
And try not to eat the whole pan by yourself ;-)

These are just beautiful Donna! My dh would absolutely love these! Im not a big cherry fan (unless its bing cherries or Ranier cherries). So Im thinking I need to bake these for him, especially since they should be a threat to me! ;)

You could use any cherries in them, really...or use another fruit ;-)

I'm really having 'issues' leaving these alone, gulp! Luckily, they're almost gone!
