Breaded Ranch Chicken


This is fast and easy!
 Especially if you already have stored bread crumbs.
When I make fresh bread, I grind up leftovers and toss them in the freezer. Why buy- when you can frugally make your own? :-)
(And, by the way, this goes for many types of bread that I make; from pita to buns to loaf bread.)
I used 8 good-sized chicken breasts. If they are too thick, you may want to fillet them.
The thickness of your chicken will influence your bake time.

8 boneless, skinless chicken breast pieces
4 1/2 cups bread crumbs
1 1/2 cups buttermilk
3 T powdered Ranch mix (bulk at Sam's)
Preheat oven to 400. Butter baking dish(es).
 Mix bread crumbs with the Ranch seasoning.
Dip chicken in buttermilk then in breading and place in baking dishes. Bake uncovered for 35 to 45 minutes, depending on thickness of chicken.

Served with a salad and pickled okra here.
