Pumpkin Oat Muffins


Topping:
1/2 cup quick oats
2 T packed brown sugar
1 T (light) butter
1 t cinnamon
Combine all ingredients and set aside.
MUFFINS:
1 white flour
1/2 cup oat bran
1 cup of quick oats
3/4 packed brown sugar
1 teaspoon cinnamon
1/8 teaspoon of each; ginger, nutmeg, cloves
3/4 t baking soda
1/2 t salt
1/2 cup chopped pecans
1 can pumpkin
3/4 cup milk
1/4 cup applesauce
1 T oil
1 egg
Mix all ingredients and fill (sprayed) muffin tins about 2/3 full. Sprinkle topping over muffin batter and pat lightly. Bake 20 to 25 minutes in 400 oven.
