Red Onion and Red Potato Bake

8 red potatoes, scrubbed and sliced very thinly

1 large onion, sliced thinly

1/4 cup all purpose flour

1 teaspoon black pepper

1/2 cup light mozzarella shredded cheese

1 can of evaporated skim milk

1/4 cup Parmesan cheese

Heat oven to 350.

Spray 9x13. Place half of the potatoes and onions on the bottom of the dish.

Sprinkle half the pepper and flour over, then half the mozzarella, then half of the milk.

Repeat layers. Top with Parmesan cheese.

Bake 45 minutes covered. Remove foil and bake 10 to 15 minutes more.
