SHERRIED CHICKEN WITH VEGGIES

BEFORE BAKING ABOVE.............................................................AS SERVED OVER COUSCOUS AND A SIDE OF BROCCOLI BELOW


Spray a large baking pan.
Toss in:
4 stalks of sliced celery
2 large carrots, sliced
1 large onion, chopped
2 cups sliced mushrooms
2 teaspoons minced garlic
4 chicken breast, sliced in half(fillet-style) with electric knife or fillet knife
(lay the chicken over the veggies)
5 medium red potatoes, scrubbed and sliced in 1/4 inch slices
2 teaspoons of black pepper
2 teaspoons of salt
1/4 cup cooking Sherry
1/4 cup white cooking wine
2 tablespoons olive oil

Bake at 375 for 40 minutes covered in foil. Remove foil and bake an additional 10 minutes.


*Served here over couscous with a side of broccoli.
