I have seen this recipe in several places with slight variations.
3 1/4 cups chopped broccoli
1 small finely chopped onion
2 carrots, finely chopped or shredded
3/4 cup shredded cheddar
2 T bacon bits opt
3/4 cup mayonnaise
-2 T sugar (can use one pack stevia)
2 t prepared mustard
2 T milk
Combine veggies in one bowl.
In another combine; mayo, sugar sub, mustard, skim milk.
Combine and toss. Cover and refrigerate until ready to serve.
My family loves this! The bacon bits set it off.
TIP: to make it extra good, I have saved leftover turkey bacon and chopped it into pieces, stored in the freezer, and tossed it in this salad in the place of the bacon bits.
