Stuffed Baked Tomatoes

Slice the tops off as many tomatoes as you will need.
Scoop out centers, leaving the wall in tact.

Filling:
3 cups cooked brown rice
3/4 cup Parmesan cheese
salt and pepper
1/2 t basil
1/2 t parsley
3/4 cup cottage cheese

Mix the filling and stuff the tomatoes. Bake at 375 for 25 to 30 minutes. Tops will become slightly golden.

These are very filling!
