Mix in order:
4 ripe bananas
1/2 cup cane sugar
1 egg
3 T melted butter
3T olive oil
1 t vanilla
2/3 cup whole buttermilk
1 t baking powder
3/4 t baking soda
1/4 t salt
1 cup unbleached flour
1 cup whole wheat flour
1/2 cup chopped walnuts
Spoon batter into 12 muffin cups. Top with a sprinkling of brown sugar and chopped walnuts.
These muffins really puff up and are beautiful! The texture is really nice too, almost spongy.
