This is another treasured recipe from More With Less. And I say treasured -because its just so good! Its like a homemade ice cream sandwich! Yummy!
Beat until stiff:
1 can evaporated milk, chilled
Gradually add:
3/4 cup sugar (I used cane)
Add 3T lemon juice
grated rind of 1 lemon
Beat until very stiff.
Roll into crumbs:
12 graham crackers
Pour half cracker crumbs into 9x9.
Pour cream over and top with remaining crumbs.
Cover well and freeze.

You can use other flavors as well!
Or leftover puddings- or even yogurts.

My mother used to do something like this with a strawberry flavor. I can remember her chilling the can of milk and whipping it. She poured the mixture into graham cracker pie crusts and froze it. I'll have to look through her recipes and see if I can find it. I think we would really like the lemon! Thanks for sharing this and for bringing back a fond memory!
