Buffalo Stuffed Peppers....


Stuffed peppers "sound" hard to make but they are really pretty easy. I usually prepare the peppers, stuff them in the oven to bake while I whip up the sides.
This time, I decided to use buffalo meat in them just to see how it would work, but you could use any ground meat.
1 lb buffalo
6 large peppers cut in half
take one pepper and chop
1 medium onion, chopped
Brown meat peppers and onions and the following spices.
1/2 t oregano
1/2 t marjoram
1/4 t rosemary
1/4 t black pepper
You will need 1 1/2 cups of cooked rice. (I used quick brown rice here.)
Mix cooked meat with rice and 1 can tomato sauce.
Pour another can of tomato sauce into 9x13, salt and pepper.
Scoop meat mixture into pepper halves and place in the 9x13.
Sprinkle lightly with Parmesan cheese.
bake at 375 for 35 minutes.
When serving, scoop a couple tablespoons of the tomato sauce in the dish over the peppers.
*Served here with boiled and buttered potatoes, peas and carrots, and a slice of bread.
