What does Coconut Cream Pie have to do with Kefir Soda?

Kefir Soda and Coconut Cream Pie, interesting huh?

A few days ago, I made these pies (after dh begging for a pie for days, maybe weeks).

Everyone had a small slice as soon as I took them from the oven but come supper time-
the kiddies wanted a second piece! I said, "Ok, I'll make a deal with you! You drink ONE tablespoon of my Lemon-ginger Kefir Soda and you may have pie".

At first, they protested and made all sorts of jokes but THEY CAVED!
Down went the Kefir Soda and yummy went the pie!
Brown 2 pie shells at 400 for approx. 12 minutes.

In a sauce pan, combine:
1c flour
1/2 c sugar
1/2 t salt
6c milk

Mix well and beat in;

6 egg yolks (*keep whites for meringue)

Heat at medium-low heat.
Cook, stirring constantly, until thickened.
Remove from heat and add;
4T butter
2 t vanilla
1c coconut
Spoon into baked pie shells.

To make meringue,
beat the eggs whites until stiff peaks form, beat in 6T sugar.
Top pie filling with meringue, sprinkle about 1 T coconut over each pie, and place in 325 oven for approx. 12 minutes until golden across the top; being careful not to over-brown.
Refrigerate until well-chilled.

And remember to offer kefir soda before serving! ;-)
