Lemon-Cranberry Wheat Muffins...
2 cups whole wheat flour
2 t baking powder
1/2 t salt
3/4 cup cane sugar
1 cup dried cranberries
1 T lemon zest (I try to keep some in the freezer!)
1 egg
1 1/2 cups milk
1/4 cup melted butter
Mix dry ingredients. Add egg and milk. Drizzle butter in lastly while stirring.
Bake at 375 for 20-22 minutes.

Ooohh, lemon and cranberries are so good together. I love the tartness of them. Your muffins must have been super.
