Peanut Butter Pudding....
2/3 cup sugar
2 T cornstarch
dash of salt
3 cups milk
1 egg
1 t vanilla
2/3 cup creamy peanut butter
In sauce pot, blend sugar, cornstarch, and dash of salt. Pour in cold milk. Beat in egg and vanilla.
Heat on medium heat, whisking constantly until pudding comes to a boil. Reduce heat slightly and
and cook 1 minute. Whisk in peanut butter. Pour into serving dish, cover with plastic wrap, and
chill for 2 hours or more. Approx. 6 half cup servings.
Garnish if you like with a dollop of jelly, chocolate chips, chopped peanuts, etc.
**To make this more healthy, use natural peanut butter, real vanilla, cane sugar, arrowroot, etc.
