Spicey Mexican Baked Zucchini Fries....

You could change up the seasonings to go with any main dish that you have planned. I fixed these with Taco Casserole so I went for a little heat! 
Heat oven to 475.
Cut your zucchini in strips.
Spray with nonstick.
Sprinkle with chili powder (or other) and salt.
Bake for 18 minutes.

These look great! I need to use up some zukes and well Im on a diet so these work wonders here, now lets see if we can pass the taste test on kids and dh! ;)

Try a taco seasoning rather than straight chili powder- they might like that better. Or maybe just a little cumin and salt? :-)

Looks fabulous! I've been looking for a new zucchini recipe. Do the "fries" crisp up at all?

Robbie, if you cook them long enough, they have spots of crispy, but nothing like fries.
