These won thumbs up all around my house today.
A nice frugal source of omega3, protein, and fiber.
Who said cookies have to be a junk food? ;-)
Cream together:
1/3 cup butter
2/3 cup white sugar
1/2 cup brown sugar
Add in;
1/2 t vanilla
1 egg
Beat until fluffy.
Stir in;
1t baking powder
1/2 t salt
1/4 t nutmeg
1 t cinnamon
1/2 cup ground flax
3 cups plain flour
1 cup buttermilk
Gently fold in;
1 cup walnuts
1 1/2 cup diced apples
Gently fold in;
1 cup walnuts
1 1/2 cup diced apples
Blend well and drop by spoonfuls onto lightly buttered cookie sheet. Bake at 350 for approx. 15 minutes. Cool on baker's rack.
