Over the weekend, I took some time to make a batch of these tender cakes for the freezer.
2 cups of wheat germ
2 cups plain white flour
1/2 cup oil
5 eggs
2T baking powder
2 1/2 T sugar
1 3/4 t salt
1 t cinnamon
1/4 t ginger
3 cups milk
Mix all ingredients in large bowl with hand beater until well blended.
Cook on hot griddle until browned.
(*To freeze: allow to cool completely on a bake's rack. Stack by servings and freeze in airtight containers or Ziploc bags. If sticking is a problem, you can layer between wax paper. Flash freezing can also help with sticking problems.)
