Potato Soup


This is a perfect soup for those of us longing for fall.
Frugal and filling!


 My oldest son always loved this soup! Wonder if the Navy is making him Potato Soup! ;-)

7 cups water
4 cups diced potatoes
1 1/2 cups chopped onions
1 cup chopped celery (tops and stalks)
2 cups milk
2T plain flour (can use rice flour)
3T butter
salt and pepper
In large soup pot, combine vegetables, butter, and water. Bring to a simmer and cook, covered for approx. 40 minutes until veggies are tender. Whisk milk and flour together until smooth. Add to soup and simmer an additional 10 minutes. Salt and pepper to taste.

I'm wondering if I could replace the cows milk in this for almond or rice milk? As soon as my cow calves we are going to try milk again, that should be in th next couple weeks! Yipee! We love potato soup here and love the fact that it's frugal!

I would think it would work fine. You could use more flour if it's too thin. Hope you have milk sooooooon! ;-)

I grew up on this soup, my all time favorite. Still a bit too summery here to make it, but soon, very soon.

My kids have grown up on it and love. My oldest would have gladly been served it every day :)
