Meatloaf -tips

Meatloaf is a great place to smuggle in some goodies! I always get in some onions and peppers and often celery, but I have smuggled in ground flax, pinto beans, refried beans, various grains and bread crumbs in an attempt to up some fiber, various other veggies that were very finely chopped, and I almost always mix one pound of ground beef with one pound of turkey. Sometimes I use the muffin pan and we have meatloaf muffins!

LEFTOVERS: DH loves leftover meatloaf sandwiches!
