Potatoes- easy red potato bake

An easy way to prepare potatoes, especially when you need to tend to little ones or other dishes in the meal.

Simply preheat the oven to 400. Scrub and cut potatoes. Toss in a 1/4 cup of olive oil and herbs to your liking or according to the rest of the meal.

You can toss them in egg whites instead of oil for a crisp outside but cut them smaller!

You can coat them in non-stick spray if you want to eliminate the fat, but be sure to turn them halfway through baking cycle and re-coat with the spray!

Options: chili powder, Italian seasonings, dill, garlic and onion powder, dry onion soup, ranch powder, Italian dressing, onions and peppers, etc.

COVER with foil and bake for 45 minutes until soft.
