Steak Casserole


This is one of my DH's favorite dishes. I use the cheapest steak that I can find from round to top sirloin. I can get a pack for $4 (but I have to buy 2 packs for this big crew).
Preheat oven to 400 and spray baking dish.
Wash, trim, and flour steak and pan fry in a small amount of oil and place in the baking dish.
When all steaks are browned and in dish, slice potatoes, onions, carrots, thinly over the top of the meat.
Use some of your leftover flour coating to make a gravy in the pan of leftover drippings. Simply stir 1/4 cup or so of the flour in the pan, add 2 to 3 cups of water and heat until barely thickened and pour over veggies and meat.
Salt and pepper.
Bake for an hour covered with foil. (Longer for thicker steaks! These are very thin so the thicker steaks may need to cook for 2 hours, on lower temp. Check to make sure you have plenty of moisture halfway through cooking.)
Total Meal cost with green beans and corn is about $10-12 and feeds 8 with leftovers! A family of four could easily make this meal for $6 and eat like kings!

We love this dish and I sometimes do all sorts of weird things with it...from thick gravy with the leftover drippings and flour to adding mushrooms and other veggies. It's one of DH's favorites.

I'm always amazed at how tender these cheaper/tougher steaks are- after being cooked this way:-)
