Cocoa Zucchini Muffins




1 3/4 cups flour ( I use wheat)
1/4 cup cocoa
1 t baking powder
1 t baking soda
1/4 t salt
2 eggs
1/2 cup brown sugar
3T melted butter
3/4 cup grated zucchini
1/3 cup plain non-fat yogurt (or buttermilk or kefir)
1/4 cup of chopped almonds, or slivered
1/2 cup chocolate chips 
Preheat oven to 400.
Place paper liners in muffin pan. (12)
In large bowl, blend flour, cocoa, baking powder, baking soda, and salt.
Stir in eggs, sugar, butter, and zucchini. Do not over mix. Blend in yogurt, then add chocolate chips and almonds.

Bake 20 to 22 minutes. Muffins are done when toothpick comes out dry.
*Tip: Can be baked in loaf pan for approx. 50 minutes. Sprinkle with powdered sugar if you like.

I made this as well last night and they were a hit. I had some frozen zuchinni left over and needed some recipes to use it up with. This one is great because it sneaks in some sort of veggie into a chocolate muffin.

I really hope that I get enough zukes to freeze from my garden because this is my all-time fave muffin!

And you're right, veggie in a muffin-with chocolate to beat all!-Blesses a Mom's heart in more ways than one!!! Hope your boys liked 'em as much as mine!
