12 ginger wafer cookies
8 oz cream cheese (half fat-free and half light)
1/2 cup fat-free condensed milk
1 egg
1 tsp vanilla
1 T lemon zest
Preheat oven to 325. Line muffin pan with paper or foil cups. Place one ginger wafer in the bottom of every liner.
Mix cream cheese and condensed milk with a mixer.
Add egg, vanilla, and zest. Blend well.
Divide cream cheese mixture into the 12 liners.
Bake approx. 15 minutes, until top is set.
Cool and top with cherry filling (or other).
Refrigerate until ready to serve.

I really do like this recipe and as soon as I am off my sugar/grains/fruit fast for 2 weeks I am making this to try! Perfect that they are small and great portion control!
