Pepper Steak and Rice


2 lbs Round steak, trimmed and sliced into strips (*this is enough meat for about 12 generous servings)
2 bell peppers, sliced
1 large onion, sliced
5 green onions, sliced
1 can diced tomatoes
soy sauce
1 t minced garlic
3/4 t meat tenderizer (opt)
3T cornstarch
(tofu- optional)

For one hour, marinate sliced beef in the canned tomatoes, garlic, meat tenderizer(opt), and 3T of soy sauce in the refrigerator.


After marinating, dump meat and marinade sauce into large pan with a lid. Add 1 1/2 to 2 cups of water. Stir meat until browned, cover and simmer 20 to 30 minutes until meat is tender.


Once meat is tender, add sliced vegetables. Cover and simmer until vegetables are tender.


Mix 3 T cornstarch with 3/4 cup of cold water. Add to meat mixture until liquids thicken, while stirring.


*Serve over brown rice with soy sauce.
