SIMPLE COLE SLAW



1 head of cabbage
2 carrots, trimmed and scraped
Mayonnaise
plain yogurt
salt and pepper
1 to 2t  vinegar
1 to 2 t dill
1 T sugar

Chop cabbage in food processor, empty into a large bowl. Then process carrots.

***If you process both together the carrots will often color the cabbage orange.

Mix approx. 3/4 cup of mayo, 1/2 cup yogurt, 1 to 2 t vinegar, sugar, dill, salt and pepper to taste.

The mayo and yogurt amounts depend on how much vegetables you end up with so an exact amount is not possible. You can do all mayo.
Use your choice of vinegars. I have come to love Bragg's.
You may also add red cabbage, celery, onions, broccoli, cauliflower, bell peppers, other spices, even caraway seeds if you like. This recipe is just a simple and basic cole slaw.
