TURKEY SAUSAGE AND RICE CASSEROLE

*******SAUSAGE AND RICE*********
*4 cups cooked brown rice
*1 lb turkey sausage
*1 cup chopped onions
*1 cup chopped bell peppers
*1 cup chopped mushrooms
*1 stalk of celery, sliced
*1 can cream of mushroom soup
*½ can of water or chicken broth
*¾ t salt
*Red pepper to taste
*cheddar cheese (opt.) for topping

**Begin browning turkey sausage. When half cooked, add onions, celery, peppers, and mushrooms. Continue to cook until sausage is no longer pink and veggies are soft. Add cream of mushroom and water or broth; salt and pepper. Mix in rice. Bake at 350 for 30 to 40 minutes in baking dish. Healthy and good, enjoy!


(This dish is very versatile; it can be served as breakfast or in tortilla wraps, or even as a main dish at supper. We often like it with oven-baked potato wedges and steamed broccoli.)


Served here with cole slaw and apple crisp.
