OVEN FRENCH TOAST WITH APRICOT SAUCE

TOAST:
8 slices of whole grain bread
2 eggs
1/2 cup milk
1 t cinnamon
1 t vanilla

APRICOT SAUCE:
2T water
2 t cornstarch
1 can apricot nectar
1/4 cup honey (you may need more sweetener, especially for kids)

PREHEAT OVEN TO 450.
SPRAY COOKIE SHEET.

BEAT EGGS,MILK,CINNAMON, AND VANILLA.
DIP ONE SLICE OF BREAD AT A TIME INTO EGG MIX, COATING BOTH SIDES.
PLACE ON COOKIE SHEET.

BAKE 6 MINUTES AND TURN. BAKE 5 MORE MINUTES UNTIL GOLDEN.

WHILE TOAST IS BAKING, WHISK WATER AND CORNSTARCH. STIR IN NECTAR AND HONEY. HEAT TO BOILING. BOIL 2 MINUTES, UNTIL THICKENED.
