6T of flour
1/2 t salt
1/2 t pepper

Dip fish in flour and fry in non-stick pan lightly sprayed with non-stick. Cook until you can flake with a fork and meat is white throughout.

If you like, make the Orange-Tarragon Sauce:
melt one teaspoon of light butter in small sauce pan and add;
1/2 cup fresh orange juice
2 teaspoons of Dijon style mustard
1 1/2 t dried tarragon
Whisk together and heat for one minute.
Spoon over hot, cooked fish.

Served here with steamed red onions, zucchini, and bell peppers;
Wild rice with black beans,
Marinated vegetable boats,
and fresh baked bread.
Walmart has a great deal on this type of fish. You can usually buy a 4lb box for a little under $10. The box that I used today had 20 pieces of fish in it! This fish is excellent!
