Mediterranean scrambled eggs



3 cups egg substitute beaten with 2T water

1 box thawed, frozen spinach, drained

1/3 cup roasted red peppers

1/2 cup light feta cheese
1/2 t salt
1/2 t fresh black pepper
1 t oregano
WHISK EGGS-WATER WITH SALT, PEPPER, AND OREGANO.
ADD PEPPERS, SPINACH, AND CHEESE.
SPRAY NON-STICK PAN, ADD 1 T LOW FAT BUTTER.


Top with Greek salsa if you like:
(tomatoes, onions, bell peppers, oregano, olive oil, salt, and pepper)


Served here with toasted English Muffins and olives.
