VEGGIE BEEF BURGERS



approx. 2 lbs EXTRA LEAN GROUND BEEF

1 cup FINELY CHOPPED CARROTS

1 cup FINELY CHOPPED ZUCHINNI or PEPPERS

1 cup FINELY CHOPPED ONIONS
2 T STEAK SAUCE
3 T CHICKEN BROTH
Saute veggies in broth until liquid evaporates. Transfer veggies to bowl, add beef and steak sauce. Shape into 8 to 10 patties.
You may fry these in a pan or on a griddle OR broil for 5 minutes, flip and broil for 3 more until desired doneness. Top burgers with sauce below.



SAUCE:

2t HORSERADISH
1T SWEET PICKLE RELISH
1/2 cup PLAIN YOGURT
2 t DILL
1/2 t PARSLEY

**Served here with 1/2 a slice of fat free Swiss cheese and a side of potatoes.
