I've been trying to base several meals a week around the BREAD, instead of the meat.
Examples: pita bread sandwiches, buns with meat/TVP patties, bread bowls with Hoppin' John, Onion Flatbread with soup and a salad, sweet 7 grain muffins with savory soups, cheese tortillas stuffed with beans, pita stuffed with beans and cheese, French Bread spun into Meatball Subs, French Bread turned into pizza bread, etc.
