OATMEAL WHEAT PANCAKES



4cups whole wheat flour

2 1/2 tablespoons baking powder

1 teaspoon salt

1 cup brown sugar

3 cups (leftover) cooked oatmeal

3 jumbo yard eggs

2 cups buttermilk

2 cups milk

1/3 cup oil or butter
1/2 cup applesauce

1 tablespoon vanilla

MIX DRY INGREDIENTS. MAKE A WELL IN THE CENTER A MIX WET INGREDIENTS; MIX ALL.
REMEMBER MY FAMILY SIZE! THIS IS ENOUGH FOR 8 HUNGRY PEOPLE PLUS A FEW LEFTOVER TO FREEZE! HALF THE RECIPE FOR 4 TO 6.

How do you go about freezing the pancakes so they don't dry out when reheated?

I can't wait to try this recipe this week!

These, out of all the recipes I use, stay the most moist. I think it's because of the oatmeal.

After I cook them, I let them cool on a baker's rack. As soon as they are cool, I stay them in groups of 3 (my children's serving size :), I then put them in ziplocs and freeze.

Heat in the microwave just until hot (1 minute on mine), or wrap in foil, sprinkle with water and heat in the oven if you avoid the microwave. If they're still dry for you in the microwave, I would wrap them in a damp towel as per tortillas, that way they steam.
