Quick Chicken and Spiral Noodles

1 lb chicken cut into bite size pieces
3 cups chicken broth (leftover from the freezer:-)
1 1/2 t basil
1 t pepper
salt to taste
1 T light butter
1 cup sliced mushrooms
16 oz bag frozen vegetables (broccoli, cauliflower, carrots)
1 box of rotini ( I use a high fiber brand:-)
Cook chicken in broth.
Boil noodles.
Saute mushrooms in the butter.
When chicken is no longer pink, add frozen veggies and bring to simmer.
Add mushrooms and seasonings.
Toss with noodles.
*May thicken broth by mixing a couple tablespoons of cornstarch in 1/2 cup cold water and adding it to liquid.
