Sage Chicken Sauce over Whole Wheat Noodles


This is quick and easy when you are in a hurry, but packs enough flavor for no one to know that its a rush job!
1 1/2 pounds of chicken cut into bite-sized pieces
3/4 cup broth or water
*Cook chicken in broth until no longer pink. (About 5 minutes.)
Add:
8oz sliced mushrooms
3 sprigs of sage, chopped
1/4 cup fresh parsley, chopped
1 t freshly ground black peppercorns
2 cans cream of mushroom
Stir and simmer 10 to 15 minutes on low.
Serve over whole wheat noodles.
(Serves 8 for about $4.25.)
Served here with Broiled Green Tomatoes.
-Simply wash and slice tomatoes about 1/4 inch thick.
-Dip into cornmeal, place on broiler pan and salt and pepper.
-Cook under broiler just until they begin to turn golden, then spray lightly with non-stick spray.
-Cook another minute or two, flip and repeat the above steps.
