TRIPLE BERRY MUFFINS


1 CUP ALL PURPOSE FLOUR
1 CUP WHOLE WHEAT FLOUR
1/2 CUP SUGAR
1 TEASPOON BAKING POWDER
1/2 TEASPOON BAKING SODA
1 CUP LOW FAT BUTTERMILK
2 TABLESPOONS MELTED BUTTER
1 LIGHTLY BEATEN EGG
1 TEASPOON VANILLA
*1 CUP CHOPPED FRESH OR FROZEN BERRIES (HERE I USED A FROZEN BERRY MEDLEY)
MIX DRY INGREDIENTS.
MAKE A WELL IN THE CENTER MIXING WE INGREDIENTS, SAVING MELTED BUTTER FOR LAST.
*YOU MAY FOLD IN YOUR BERRIES IF YOU WISH BUT I PREFER TO SPOON A TABLESPOON OF BATTER IN MY MUFFIN CUPS, THEN DIVIDE THE BERRIES INTO THE CUPS AND TOP WITH THE REMAINING BATTER.
BAKE AT 400 FOR ABOUT 25 MINUTES, UNTIL GOLDEN.
NOTE: YOU MAY USE THE SAME BATTER FOR ANY FRUIT OF CHOICE!
