I pulled 4 little chickens out of the freezer to boil up for some dishes for later in the month.
This was the quick lunch I fixed with some of the chicken. Perfect for a hot day!
2 to 3 cups shredded chicken
Romaine leaves
1 cup Light mayo
Shredded sharp cheddar cheese
1 pkg of fajita mix (or homemade mix)
10 tortilla wraps
Mix fajita seasoning mix in the mayo. Allow to stand at least 15 minutes, or longer in the refrigerator. Spread a little of the may-seasoning mix on the wrap, place on lettuce, chicken, and cheese. Roll and eat! Yummy and easy! OH, and frugal!
