I discovered these little beauties several years ago after reading some books by the Broers. I fell for them. They are just so unique! Not your average squash by any means, but certainly worth a try- even with children!
This year we decided to grow some ourselves!
Here's how to prepare them:
Slice them down the middle lengthwise. This is the worst of the work and you'll either need a good knife or a strong man to cut them ;-)
But after you have them sliced, take a spoon and scoop all the seeds out. *
Lay them cut side down in a baking dish with about 1/2 an inch of water. Cover and bake until fork tender at 400. (30 to 40 minutes)
Once they are cooked and can be pierced with a fork, scrape the noodles/squash out of the skins, digging against the skin so as to keep some of the strings in tact. (Click pics to enlarge.)
Some of my crew like them best with spaghetti sauce.
Others, including myself, like them with butter and Parmesan cheese.

Donna, I haven't had spaghetti squash in years. The first time I made it, I cooked mine in the microwave, which turned out great. My family enjoyed it with a spaghetti sauce and grated parmesan cheese. Boy was that ever good!
