Kiddies love this lunch...


I make bean enchiladas with corn tortillas; simply spread re-fried beans, sprinkle with cheese, and roll up. Place the roll-ups in a pan, pour taco sauce over, sprinkle with cheese and bake until hot and bubbly at 350. Sprinkle with green onions.
The meat pockets are simply stuffed with hot taco meat, sauce, and cheese.
My kids love this lunch and its quick and frugal!
We had fruit for dessert!

My kids love Bean burritos. I always use flour tortillas though. I like making my own refried beans now that I have finally made them taste right.

I use flour ones for the meat and I usually try to find whole wheat. I have tried to make 'em a few times but...well, let's just say- I need some practice!

I would love to see your recipe for refried beans! Hope U post it sometime!

I am going to find the recipe for those beans and get it on my blog today! That is if I can find it!! I got it from somewhere else and it's just wonderful. They taste so much better than canned refried beans.
