Orange-Almond Raisin Muffins


2 cups plain flour
2 t baking powder
1/2 t salt
3/4 cup sugar
1 egg
1 1/4 cup whole milk
1/2 t vanilla
1 T orange zest*
1/2 cup chopped (crispy) almonds
3/4 cup raisins
1/2 t ground ginger
1/2 t cinnamon
Mix dry ingredients, then wet.
Bake at 425 until tops brown, then butter them! Yummy!
