I've been thinkin'....


I've done Once a Month Cooking several times (and loved it's benefits!) but now my kids are bigger (2 are teens) and I need MORE FOOD and I would like some different recipes.

You ladies who do OAMC, do U have any recipes for families of 8?

And if you do, would you post so I will have your blog addy, so I'll know right where to find you and your recipes, should I decide to do this again!:-)

I already shop OAM, usually, but to cook, means more prep but so much more benefits!


Allllll kinds of great tips there but this week is backwards week! OH how fun!

I always liked to do the french toast ahead of time especially when I knew we would have people over for breakfast. Just make huge batches of french toast cut the slices of bread in half so they are like fingers and once cooled freeze on a cookie sheet and store in a freezer bag, then when you want them, just drop in the toaster for a minute to warm or under the grill and you're in business.

Also check recipezaar. Just type in OAMC and you'll get around 35-40recipes, plus links to their categories for freezer food.

I like a lot of the stuff at http://www.30daygourmet.com/ for OAMC, but find my family needs more seasoning for most recipes. The have everything--breakfasts, snacks, dinners, holiday meals, day care meals, vegetarian etc.

I love freezer cooking but do mini sessions instead of that large all day affair. The big hit for us is meatloaves and lasagnas. They make large servings and are easy to cook.

I dabble in making meals and putting them in the freezer. I did enough for 2/week until summer hit, and then we eat so much fresh stuff, that I got out of practice. Here's one that my family really likes and doubles nicely to feed a larger crowd, just don't actually double or triple the salt! I have to put the recipe here, as I don't have them listed on my blog.

Chicken on Cornbread
Everything Meals for a Month (pg. 95)
Yield: 4 servings

½ cup flour
½ cup yellow cornmeal
¼ tsp baking soda
½ tsp baking powder
½ tsp salt
2 T chopped green chilis
3 T vegetable oil
½ cup buttermilk
1 egg, beaten
¼ cup minced onion
¼ cup butter
¼ cup flour
½ tsp salt
1 cup chicken broth
½ cup milk
2 cooked chicken breasts


Cooking Day Instructions:
Preheat oven to 400. Line 8x8” pan with foil and grease. In large bowl, combine flour, cornmeal, baking soda, baking powder and salt. In small bowl, combine green chiles, oil, buttermilk and egg. Mix with dry ingredients. Pour mixture into prepared pan and bake at 400 for 15 minutes until set; cool.

Meanwhile, in large saucepan, cook onion in butter for 3 to 4 minutes. Add flour, salt and pepper; cook and stir 2 to 3 minutes. Add broth and milk; cook and stir 5 to 6 minutes. Cool gravy in ice-water bath or refrigerator.

Remove baked cornbread from pan and wrap again in foil. Slice chicken and put in 1 qt Ziploc bag with gravy. Seal bag, attach to cornbread, then label and freeze.

Serving Day Instructions:
Thaw cornbread and chicken overnight in refrigerator. Unwrap cornbread and place in pan; bake at 400 for 8 to 10 minutes or until hot and golden. Place chicken and gravy in skillet and cook over low heat for 8 to 11 minutes or until hot. Serve chicken and gravy over hot cornbread squares.

I have tried out a couple of freezer meals so far. I have posted them on my blog. :) Good luck! The book I used was great and it has the calculations prefigured for multiple meals.

How about enchiladas? Most any recipe freezes well and they're easy to make in bulk.

Well I only have one, and she barely eats solids, so I don't have any specific large recipes. I do know of a really great site though. http://www.ellenskitchen.com
She has a section called "Big Pots" and its about bulk cooking as well as OAMC. I did a minisession with potatoes using her suggestions and it was easy to do while still having a regular day at home...just extra kitchen time. Most of her recipes are for serving 25-50 so you can just portion them for your family and freeze like suggested. I would guess that its probably better to keep things in really shallow dishes, as much as possible, since it will be big portions.

We do a lot of this. My cooking club does meals every month. We make 7 4-serving meals. I am going to try to post more recipes to our website, but I have been bad about it. Lasagna and manicotti are great ones. You don't have to cook the noodles if you let them thaw in the fridge overnight. Our website is here: http://dashofsass.blogspot.com/. The OAMC recipe for Chicken Fried Rice on Recipezaar makes a ton and is really good! I like Recipezaar because they have a ton of OAMC recipes and you can change the servings. Hope that helps.
