Chocolate Cherry-Berry Muffins


1 3/4 cup plain unbleached flour
1/4 cup ground flax
2 t baking powder
1/2 t salt
3/4 cup cane sugar
2 heaping T cocoa
3/4 cup dried cherries and berries
1/2 cup chocolate chips
1 egg
1 1/3 cup milk
1/2 t vanilla
3 T gently melted coconut oil
Mix dry ingredients, then blend in wet ingredients. Bake at 425 until toothpick inserted comes out with just a few crumbs. Approx. 15 minutes Yield; 1 doz
