Soured Oatmeal Coffee-'cake'....

This was an interesting experiment! It's a cross between cake and baked oatmeal when it's hot but once it's cooled, it becomes more cake-like.
Soak overnight:
3 cups rolled oats
1/4 cup buttermilk
2 3/4 cup of water
(I didn't want a real sour taste but I did want the benefits of soaking!)
Mix in:
1 1/2 T oil
3/4 cup cane sugar
1 t vanilla
2 t baking powder
1/2 t salt
1 t cinnamon
1 T orange zest
1 beaten egg
2 cups of plain flour
Pour into baking dish and make the topping:
1/4 cup melted butter
1/4 cup cane sugar
1/4 cup chopped pecans
1 cup shredded coconut
Sprinkle over cake and bake at 375 for approx. 30 to 40 minutes.
