A not-so-frugal meal...


I baked a salmon, which isn't the most frugal thing to cook, but it is very good for you and I kept servings to a 'normal' size to make the most of this yummy fishy!

I simply coated the pan in butter, basted with a tasty chipotle sauce, sprinkled with parsley, wrapped and baked at 425 until flaky and cooked through. (This sauce is very tasty and claims to be 'natural' and is sold around the fish counter in most stores. I bought it on sale for $1.79 and it's lasted through 2 meals and likely will go for 2 more!)

*Served here with home cooked chick peas, sauteed zucchini and onions with basil and rosemary(in olive oil), and white sweet potatoes in butter and sorghum.
