Why not bake when it's cold outside?

I stayed in the kitchen a good portion of the day, just baking to my heart's content!

Why not? It's cold outside, sleeting, and I love being close to a warm oven!

I love this muffin recipe that I came across because there's so much to do with it, including make up batches to freeze!

1 cup whole wheat flour (I used plain, out of wheat)
1 cup dry oats (*you could soak oats and flour in yogurt as your add-in)
1/2 cup sugar (can use cane, may need more depending on what you add)
1/2 t salt
1 1/2 t milk powder
2 1/2 t baking powder
1 t cinnamon
*opt 1 t nutmeg (depending on add-ins)
1 t vanilla
1 egg
2 T oil (I used coconut oil)
1/4 cup water
1 cup of mashed fruit or veggies (bananas, sweet potatoes, even white potatoes, carrots, zucchini, applesauce, yogurt, peanut butter, etc)
1 cup of 'chunks' (raisins, nuts, chocolate chips, m&m's, chopped fruits-dates, prunes, etc., coconut, etc)


Bake at 350 for 15 minutes!

*I used leftover white sweet potatoes and raisins in these!

Hello Donna! I think it's wise of you to use coconut oil. Coconut oil is the ideal oil for cooking as it is the most stable and highly resistant to oxidation and free radical formation.

Nice picture of your muffins! They look like macaroons. :-)
