Breaded Fish....




Dip fish (I used tilapia, any white would be good) in 1 large well-beaten egg.

Then dip in bread mix:
(whirl in blender or food processor:)
3 cups of bread crumbs (I used several slices of whole wheat and a slice or two of white so it wouldn't taste so wheaty ;-) ..and remember I'm cooking for 8!
1 heaping teaspoon of paprika
1/4 t rosemary
1 T parsley
1 t onion powder

Use 1 1/2 T butter to grease baking sheet or pan with edges. Heat the pan in the over before placing fish on. Bake breaded fish at 400 for approx. 15 minutes until it flakes with a fork. (May want to broil for about one minute before removing from oven for crispness.)

Served here on seasoned brown rice (with onions and garlic), buttered Amish bread, and slaw.
