1 Hour Loaves....

Oh how I love these little football shaped loaves!

And they are perfect when you are pinched for time!

Mix and set aside:
1/2 cup warm water
1 T yeast
Heat:
1 cup of milk
1cup yogurt
on stove top just until the chill is off and just warmed.
Add to yeast/water:
1 1/2 T honey
2 T olive oil
2 t salt
Blend in yogurt/milk and add:
3 cups wheat flour
To one cup plain flour add 1 t baking powder and 1 t baking soda and add to dough.
Gradually stir in approx 2 more cups of plain flour.
Be careful not to add too much flour. If you are using a mixer, add just until dough begins to pull from bowl and continue to mix. Dough will remain soft and stretchy.
Preheat oven to 425.
Turn dough out on lightly floured surface and knead only slightly adding the least amount of flour possible. Divide in half. Shape into 2 football shaped loaves and place on baking sheet, lightly sprinkled with cornmeal. Score with a jagged-edged knife. Brush with one beaten egg white that has 1T water beaten in. Sprinkle with sesame seeds if desired.
Bake for 30 minutes. Bread will get nice and dark. Allow to cool for 20 to 30 minutes before slicing. Great for sandwiches and honey!
