Sausage Meatloaf...


1 lb turkey sausage (or beef, etc)
1 lb pork sausage (I happened to find some organic the other day! Woo hoo!)
1/2 cup plain, uncooked white rice (I want to figure out how to do this with brown!)
1/2 cup finely chopped onion
1/2 cup finely chopped bell peppers
2 T onion powder
1/3 cup tomato sauce (the recipe this was based on called for BBQsauce)
Mix all ingredients and press into baking dish.
Bake at 450 for 25 minutes, reduce heat to 325 and bake for 25 more minutes.
During the final 10 minutes(carefully drain grease), top with 8oz tomato sauce and lightly sprinkle with garlic powder.
**This dish could be used at breakfast, lunch, or supper as we say in the South!
**Tip: If your kids are a little fickled about sausage because of 'tough spots', process your meat for a few seconds in the food processor before using in recipe.

Another way I cook this:
Sometimes I make this "Italian Meatloaf" using 1lb beef, 1 lb sausage, plus 1 t rosemary, 1 t oregano, 1/2 t basil, and some minced garlic.
