Cottage Cheese Dill Bread...

This recipe makes 2 loaves. It is a very hearty bread with a great flavor. My DH really likes it!
It is an especially good bread for low protein meals as it has cottage cheese in it!

1/2 cup Warm water
1 T yeast

2 cups of cottage cheese heated (simply put in a pot and turn on low, it will get just warm enough while you are mixing the other ingredients,you basically just need the chill knocked off of it;)
1/4 cup cane sugar or honey
3T melted butter
1 T onion powder
2 1/2 t dill
2 t salt
1/2 t baking powder
2 eggs
4 cups whole wheat flour (maybe 1/4 to 1/2 cup more)
1 cup unbleached white flour
Blend well. Dough will remain soft and moist. Allow to rise 45 minutes to an hour. Knead and divide and place in two well-buttered loaf pans. Let rise approx. 30 minutes. Bake at 350 for 35 minutes until golden. Butter the last 5 minutes of baking.
